<p>Hello welcome back toady we are gonna be focusing on few quick cooking tips. And what I thought we will talk about the show id how to slice and dice vegetables. And we are gonna be focusing on onions for today. Ammm first one I wanna show is sort of slicing and then we will move to dicing. Now when you I have my onions here I have cut in half and cleaned them. When we go ahead and slice the onions typically I slice them with the grain. If you take a look at this onion you can see the grain here. Ammm sometimes people like to cut it against the grain here and you will see the difference. </p>
<p>Usually I would go with the grain and lets do something specific that I wanted to do differently. Now there is the root end here and what I wanna do is cut that root end out. Because if I leave that root end on the slices will not separate okay. So now I am ready to go I have the root end off this onion set I am gonna, I am gonna slice with the grain and I will do it as such here. Be careful at the end here and I have got my final slice in here and now I have got all of my Julienne pieces and they are all comes out separate like that. That’s what Julienne looks like on the slice now. Just see you can see the difference I am gonna cut this onion ammm against the grain. And I am gonna just move this aside a little bit, now we are gonna go against the grain and you will see the difference straight way. Keep it around, okay now you can see the difference here ammm with the the slice. And this is what we like to work with or I like to work with doing the Julienne out here over onion slice. Here you can see it keeps the shape of the onion that half little shape, here it is little bit straighter and looks little bit nicer. At the end of the day its not gonna to affect the eating ability but it really depends on the presentation that you are looking for and how you wanna do it. You can go thinner or thicker, sometimes I need to go really paper thin because I wanna really delicate dish and that’s how you do it slicing onions okay.</p>
<p>We are gonna talk little bit about dicing onions and dicing onions ammm you know I see a lot of people when they turn to dice they will use the cut and they will cut you know they will cut one piece at a time and there is lot of inefficiency involved. And there is an actual correct way to dice an onion. Now I am gonna leave the root end here on this particular styled cut and I want the root cut on here because it’s gonna hold the onion together. The first thing I will do is first side half thick I want my onion size to be in this case I am gonna go for half an inch okay. So what I am gonna do first is actually cut down into the onion at half inch slices and I wanna take the knife and push it only into the onion but I am not gonna go all the way to the end that’s very important.</p>
<p>So now I have the piece that stays together but I have got my half inch slices in there. The next I am gonna do is come in across the onion this way. I am gonna slice in about two thirds of the way I am gonna go one more time here at the top making two slices. And essentially what I am gonna doing is you can see some of the dices coming up. I prepare this onion to be a perfect even dice and all have to do is now go across this way top down and then I have my dice. So I gonna go down, down, down, down there. </p>
<p>The question that people ask me all time is what about this piece here and this is what I do get to end and get all this zeal you can go here and just finish up your trim and that’s all we have left over as a waste and you know in a restaurant I put this into a stalk or I put this into something to get the flavor off. So now you see I have nice even diced pieces here and they are all uniform in size. So one more time I will show you quickly and I will go with smaller dice just so that you can one more time and you can see that the same process works for larger or smaller dice. I wanna show it for little bit smaller, I will wipe off my knife. Again I am keeping the end piece on and I will go in there, this time a little smaller. Again I am going down in to the onion but I am not cutting all the way to the root, its being together. I am gonna cut across, I am gonna go twice depending on you know how aggressive you feel you can go couple of times. Now I go across and I have my small onion dice again put this last piece here I can go across, trim it up. I have that much trimmed there. And I have my small pieces of onions ready to go for my sauté or my soup or whatever I am gonna do. So that’s it, slicing and dicing the vegetables. I will see you next time. 	</p>

<p>Guessing at cooking increases the stress when you are unsure of the results to come. So, its hard to believe something you actually see it. As I said before, if you believe it first then you will see it. So, there are ways to quantify your cooking and eliminate your guessing. Things like the medium heat rather then hand hover we can use something in nature that we know exists. Water evaporates at two hundred twelve degrees Fahrenheit, one hundred degree Celsius. So, sprinkling a little water onto a sauté pan and watching it evaporates enables you to quantify how hard the pan is. You know it is least at the boiling temperature of the water.</p>
<p>You can do this with your barbeque grill as well. The more violently it evaporates, the more quickly it evaporates, the harder the pan is, this is the way to quantify. Or, perhaps a small piece of food is used to test in temperature like in pan frying don’t put the whole chicken breast in there, the oil isn’t ready. Perhaps it is   more to see how it reacts. Same thing is with roasting something in the oven, take a  small piece of something that you are roasting and test it that way. You know, in our catering company we use to make hundreds or thousands of crab cakes in one big batch. </p>
<p>So, we just don’t make and then serve them we need to taste it, taste it first and with raw egg you can just taste the whole batter. So, we would cook one of the thousands of crab cakes, taste it and then adjust from there cooking, roasting a small piece. First is the way to quantify, another great way to quantify your cooking is get a digital scale and know your raw portions. I used to make an entire box of spaghetti. A sixteen ounce, one pound box of spaghetti for my wife and I, we would eat as much as we could, probably over eat, put the left overs in the refrigerators and eventually throw them out a few days later. So, with my digital scale I now weigh eight ounces of the dry pasta as the portion, we eat that, there is a little bit left over, I adjust it down now I know 5.3 ounces of dry pasta is a perfect portion. I get three meals out of a box of pasta, rather than one over gorging one and then throwing out the left overs. </p>
<p>The same thing applies in the grocery store, when you go to the grocery store with a mind of portions, you know four-five ounce of chicken breast each for your family. This helps you not over buy at the grocery store. And, your portioning you should stick to it, you know if you buy a bag of frozen shrimps even if there is only three shrimps left in the bag, don’t just throw them in and over eat there will be three shrimps that you will add next time you buy shrimps. Don’t just make the whole package, know your raw portions with your digital scale. </p>
<p>And, you know lastly going to taste and not being able to see flavor where you can taste flavor. So, rather season your entire part of whatever you are cooking put in little bit in a soufflé cup, in a first, season that and taste it as a texture, when you like that then add it. So you don’t ruin whole batch plus this is gonna cause you to taste as you go. So, you know stop guessing, stop guessing what is happening with your food. When you observe results and you purposely, alter them for the next time you learn and have a cut. So let’s start with this few visual queues that I have told you about, you can stop guessing, you can be confident that what you see is what you believe. But ones you believe it ,you see it for sure.</p>

<p>La la la la la la Abby’s cooking tips .So here we are in Abby’s kitchen once again. Its Saturday afternoon and sun is been shining all the day for the passed three days, thank you. So we started off by boiling the kettle here to the capacity of boiling temperature and then we have taken two tea bags tick tock rooibosh tea in glass, two bags each fine glass two spoonful of the finest dark sugar  we got three slices of  a freshly prepared lemon one slice to each cup one two three. </p>

The holiday shopping season is a fun and with that in mind let’s look for some fun cookie related gifts.</p>
<p>Today we are going to pick up the gifts at the table; i am a good cook and invite me over for a dinner, as I am tired of eating by myself over the kitchen sink. i created what i am calling the AB game to illustrate my point. today’s ideas are from Williams sonoma, www.Williams-sonoma.com. But receive no compensation from them. Lets get started with our game choose the best gift A or B. is it A, a tasteful William Sonoma recipe and social apartment diary? Or B a monogram steak brand, a steak brand will be ugly and I would like one for myself, but that’s not our goal here.</p>
<p>Your friends who want monogram food, are probably not generous sharing people that makes A the best choice. But be sure to prescheduled yourself for dinner. Use ink not a pencil. Next pair A a soap dipping oil, from around the world or B a pop corn popper.</p>
<p>Well at least the popcorn popper might get you invited for a movie, which peaks watching videos on the Internet, by your self. </p>

Here we gonna producing lots of raw food, lots of raw living foods.</p>
<p>What we gonna do with these foods? We gonna prepare them in a way, it doesn’t destroy any enzymes. And we will have full living nutrition. I am gonna take, what we can find in the garden, bring it back to the kitchen, make some lovely recipes. And eat when you are up. It gonna be going just, you gonna be enjoy. Here we are on a way to some blue berry farms. These are some paradise one of the biggest blueberries farms in Australia. And then it’s a blueberry picking season right now.</p>
<p>So I am really looking forward. These blue berries have been proven to a systemic prevention of a macular degeneration. It’s fantastic. Now, we goona make some thai curry, carrot juice, here we some Patrick’s soup. We gonna make, salad, Cashew retreat, banana mango ice-cream. And now we gonna make beautiful blueberry recipe. So we gonna place these almond in the grinder. Get to get some more. Blueberries, strawberries, bananas and quickly grind. Peanuts powder from Western Australia. Now we make macadamia collide base.</p>
<p>Ok all we need is, of course macadamia that’s in local farms. We crack those put them in a jar that may look beautiful. Here is my macadamia nut pie. And here we go some beetroot soup, blueberry and mango ice-cream, cashew cream, carob mouse, Thai curry an appetite.</p>
