And added 6 ounces smoked ham. Once it’s browned add the celery, carrot and onion. It takes about 5 minutes for the vegetables to soften. These look about right, then add 2 cups chicken broth, bring to a boil and stir to release brown bits at the bottom of the pan. We’re building tonnes of flavor in this dish. Now let’s add this mixture to our slow cooker along with 3 cups of water.

To that add 2 medium sweet potatoes cut into ¾ inch cubes. Finally place the chicken breasts on top of the potatoes. The liquid doesn’t have to cover the chicken. Cook on a low setting until the chicken is tender, 5 to 6 hours and no peeking. Lifting the lid allows heat to escape and increases cooking time. And now dinner is pretty much taking care of itself, giving you time to go about your day and when its 15 minutes to dinner time there’s just one more step to finishing off this delicious and easy meal. Adding a third of a cup of heavy cream will make a thick rich sauce.

Convenience has never tasted so good. You can feel free to play around with this recipe, use different vegetables, add some herbs and spices. This cook book was written with you in mind and each recipe has been tested and retested but they’re still your recipes.
