Leftovers and tortillas go hand in hand and in my house we always have a little bit of leftover steak.
So I’m gonna show you how to make chilaquiles with leftover steak. You just wanna start by putting a drizzle of olive oil in a sauté pan and just let that heat up a little bit. While that’s heating, I’ll slice the steak. You just wanna really thinly slice your steak. You can make this into a breakfast, lunch or dinner chilaquiles depending on what you want to add to it.
But today I’m gonna make this in to a lunch chilaquiles. And we’re gonna add the steak -uh- the steak is cooked pretty medium rare, so you - it’s gonna cook just a little bit more let it be nice and pink. Throw your steak in there and then you’re gonna get a little color on that and then you add tortilla chips.
These are made with corn and I love to use the corn ones because they get a little chewy once they soften up. And then we’re gonna add some moisture to this that’s gonna give the –uh- tortilla chips a little bit of softening.
