You can just start layering your filings and keep in mind that because this is translucent so all your fillings will show so you want to pick the prettiest pieces you have and line them up nicely so that..hmm…you can have a nice presentation layer.
Start of by layering off some of the lobster meat and then we will layer in some of the rice noodles. Takes a little bit of time to bring them together. Put on the layer of mint leaves and some cilantro…you can use whatever herbs you have depending on the what sorts of fillings you are using..basil are very common in spring rolls and shrimps is a great thing to put in the spring rolls. Hmm..any veggie you like its great. I am sprinkling little bit of shredded carrots. Once you have all of the fillings in spring rolls its time to roll.
Roll the bottom part up and start to quickly firmly trap your fillings in and start rolling..and then you can pull in the sides almost like you are making a burrito. it just take little bit of practice..I am not very good at it…and keep rolling it up..until you have nice firm spring roll and then you rest it for a minute because it still dump right now and its going to be little bit sticky as it dries and that will help to glue it together and hold it to one piece. Alright once your spring roll starts to firm up..I have another one which i done right now..I am going to cut them..its good to cut in sort of an angle cause it makes pretty good for your presentation…and make sure to use a sharp knife or it will all start to fall apart.
Its really good stuffing right now..i like to present this standing up on a little plate. one more half..and then you can garnish it with your favorite topping sauce. I have got mango sauce right here. It looks really good with the lobster, adds up sort of the flavor of this and a little bit of your flavor and go ahead and bring it for your guests.
