I’m going to flip them over and do the same thing on the opposite side.

So I’ve got my pan heating up over medium high heat here, I’m going to go ahead and add my extra virgin olive oil and 1 tblspn of butter. So usually I just take extra virgin olive oil but when it comes to corn I like to add a little bit of butter for the richness. So it’s a little bit of olive oil, a little bit of butter. Ok, when we’re all melted, we’re ready to add onions and garlic right in to the pan. So we’re gonna let this cook for about 2 mins or so, just until so they get the real fragrance.

So now I’m going to go ahead and add my jalapeños and 3 ears of corn cut right off the cob. If you don’t want to bother with the fresh ears of corn or cutting it off the cob, feel free to use canned or frozen and if you opt to do that your gonna want about 3 cups. So a pinch of salt and a couple of turns of the pepper mill. I’ll bring the heat down to a medium. Ok I’ve given it a stir and let this cook for about 4 mins.

You know whenever you have any ingredients that grow in the same month or seasons its a pretty sure bet that they’re gonna taste great together. Its like a universal recipe from Mother Nature and here is a great way to remember it. If it grows together it goes together. So its been about 4 mins so I’m giving it a stir, the corn is nice and tender its really fragrant, my onions are translucent. We’re ready to move on. So we’ll start with my spices- ok we’ve got 1 tspns of paprika, add 2 tspns of cumin to add nice smoky flavor, you’ve got 15oz. can of white beans- I’m using great Northern beans, some chopped up cilantro and about a cup of sliced tomatoes here and then let’s just let this cook through for about 5, 6, or 7 mins while we go and get started on Tilapia.

So the pan is heated up and I’m gonna add some extra virgin olive oil merely a little bit because this is a non-stick pan so in goes our tilapia, lovely, lovely- now we’ve got that sizzle going, the pan is nice and hot. So we’ve got our topping in the pan, 2 to 2/12 mins per side and we’re done. Our corn will be ready and we’re gonna be sitting down to a quick, easy and delicious meal. Its about 2mins I’m going to flip my fish over to the opposite side and cook it.

Look at those pretty, pretty. Give a about another minute for the tilapia and I wanna come back and show how the corn is looking, oh! oh yeah! Looking lovely, give it a stir. This guy is pretty much ready to go
