We’re gone add about 2 tblspns of olive oil. And you want to mash them while they’re still hot because you want to melt the cheese. About a 1/4 cup of grated parmesan cheese, a little bit of salt and pepper.

I like to use sea salt in this because it gives it wonderful flavor and then you just take a potato masher and you can just mash them right in the bowl. Of course you could add things that we you put in traditional mashed potatoes like milk or cream or butter but I think the flavor of the sweet potato after its been roasted it is so wonderful. It really doesn’t need a lot more. I like them a little lumpy if you like really smooth of course you could put them through a potato wringer or just mash them - you know as much as you like them. If you like them really creamy an electric mixer makes them a lot creamier but I like them lumpy kinda like this. And these make a wonderful side dish to go with grilled steak or chicken they’re wonderful with pork chops.

This is another one of those things that when I’m making it, I always make a little bit of extra, its great to have a little left over. Just put it in a plastic container and put it in your freezer. Mashed sweet potatoes make a wonderful thing to put in soup - to flavor soups or risotto. If you have really just like a spoonful left its wonderful to spread on a quesadia with melted cheese. It gives quesadia wonderful flavor.

I serve this with a really simple meal so I grilled fish, steak or chicken and you can see how quick and easy this is to make and usually right before I serve it I’ll just put a little bit of shaved parmesan on the top and you can shave parmesan with a vegetable peeler, you could also do this with a small paring knife. But you can see how wonderful it looks and how simple it is to make.
