In here, I put just about maybe a teaspoon or so of herbs to province. So you just take your chicken breast and just dredge it right in this light batter here and making sure that all those herbs get pressed in, and then we’ll take it to the stove and cook it up.
So I’m heating some olive oil here on a medium setting, and I’ll just take my piece of breaded chicken and place it right in the oil. You can here it sizzle there a little lightly, that’s nice. And that just needs to simmer and sizzle there for about 3 or 4 minutes each side till it gets nice and brown. After 3 or 4 minutes, we can just flip it over and let it cook on the other side for about you know 3 minutes or so. This is, this recipe is wonderful with maybe you know some sautéed summer vegetable or a nice sauce over it.
Another idea for pounded chicken breast is to grill it on a gas or charcoal grill or even stovetop grill. So what I have here is just a blend of olive oil, some salt and a nice lemon pepper spice blend. So you just take your breast and just make sure that the both sides are coated with the oil and spices. So heat your grill to medium heat. I have here a nice oil clad stovetop grill, but you can also use your gas grill or charcoal grill, and it should be really hot but not smoking. Then you take your chicken breast, you just put it right on there. Its only needs to cook for three minutes per side. You can even put all those little chicken tenders there as well. After about three minutes you can flip your pieces over and they should be nice and brown on the other side, and then you cook for another 2 or 3 minutes on this side, and when they’re done you can just slice them up. They’re wonderful on top of salads or drizzled with a nice dimishing sauce.
